Sweet Potato & Tuna Fishcakes
Makes 4
99 calories w/o green beans or salad
INGREDIENTS
6 oz/175 g sweet potatoes, peeled and chopped
6 oz/175 g canned tuna - drained
4 scallions trimmed and chopped
t tbsp grated lemon rind
1 tbsp chopped fresh cilantro
pepper
lemon wedges for garnish
salad or freshly cooked green beans to serve
1. Boil sweet potatoes for 10-12 minutes until tender then drain and mash
2. Flake tuna then add to potatoes along with chopped scallions, lemon rind, chilantro and pepper to taste.
3. Mix all ingredients lightly together then using slightly dampened hands shape into 4 circles. Place on plate cover loosely and chill for 30 minutes or longer.
4. Preheat oven to 375deg F/190deg C. Place fishcakes on a large baking sheet and cook for 20 minutes, or until piping hot.
Transfer to serving plates, garnish with lemon wedges, and serve with salad or freshly cooked green beans. Enjoy!
